Saucy pancakes

Stuff: (for 8 pancakes) 125g plain white flour (for wholewheat pancakes use a mixture of half white and half wholemeal flour) pinch of salt 1 egg 300ml milk 15ml oil oil for frying

What to do: Sift the flour and salt into a mixing bowl making a well in the centre. Break the egg into the middle and add a little of the milk. Mix the ingredients together, then gradually beat in the flour until smooth. Beat in the oil and the rest of the milk until the batter is the consistency of thin cream. Cover the batter and stand in the fridge for 20 minutes. Heat a pancake pan and brush with a small amount of oil. If the batter is thick add a little more milk, then pour a small amount into the pan so that it¡¦s spread thinly and evenly across it. Cook over a moderate heat for about a minute until the edges are curling away from the pan and the bottom of the pancake is golden. Toss the pancake and cook for 30 seconds until browned. Repeat until all the batter is used, stacking the pancakes with sheets of greaseproof paper between them.

Fillings

This is your chance to get creative. Loads of combinations of cooked veg, herbs and nuts with white sauce, soured cream or cream cheese work well. Alternatively, think gooey chocolate or honey. To get you started, try: Broccoli in cheese sauce Spinach with pine nuts and feta cheese Leeks and mushrooms in soured cream sauce with parsley Aubergine, peppers and tomatoes with fresh coriander Blue cheese and walnut Banana and honey Melted Mars bars (lush!)

Hot stuff ¡V Mexican style

Stuff: (for four) 1 big bag of mixed salad 4 southern fried chicken pieces 1 packet of spicy potato wedges 1 jar tomato salsa 1 pot of sour cream

What to do: Cook the chicken pieces and spicy potato wedges according to instructions on packet. Put a handful of salad in each bowl. Arrange cooked potato wedges on top of salad. Chop up chicken pieces into strips and arrange on top of wedges. Put one large dessert spoon each of sour cream and tomato salsa on the top of your creation. Et voila! Serve with spicy bread and then slam a few tequilas.

Betty's sausage and mash surprise Stuff: (for four people)

1lb sausages (pork, beef or something sexier) 1lb tomatoes (optional) 2 medium onions 2lb potatoes mustard butter salt and pepper

What to do: Peel and chop potatoes and onions. Place potatoes in salted, boiling water for 20 minutes or until potatoes fall off blade of knife. At the same time, grill sausages for approximately 20 minutes, turning regularly to cook each side. Grill tomatoes (if using). Fry onions until soft and golden. Remove sausages from grill and cut lengthways. Drain potatoes and leave to stand for five minutes. Smear each sausage with mustard and placed in greased oven dish. Add a large knob of butter, salt and pepper to potatoes and mash violently. Place tomatoes and half the onions on top of sausages. Cover with potato and use remaining onion to garnish. Bake in oven at 190„a for 20 minutes. Serve with baked beans!

Lizzie's chicken crunch Stuff (enough for two hungry people):

Cooked chicken pieces 1 tin of condensed mushroom soup 1 tin of sweetcorn with peppers Salt and pepper 2 packets of chicken crisps

What to do: Mix the chicken, soup and sweetcorn together in a bowl. Season with salt and pepper. Spoon the mixture into an ovenproof dish. Crumble the crisps and sprinkle over the top until mixture is fully covered. Bake in the middle of the oven at 190„aC or gas mark 5 for 20 minutes. Serve with salad, rice or a jacket potato. Easy!
